Kantha Shelke, PhD, CFS, IFT Fellow, is Senior Lecturer at Johns Hopkins University and Principal of Corvus Blue LLC, a Chicago-based food science and regulatory consultancy advising C-suite executives on competitive intelligence and product portfolio strategy to lead, rather than follow, industry trends. With over 35 years of experience in ingredient science, innovation, and regulatory strategy, she has counseled Fortune 500 companies and trade commissions from more than 14 countries on navigating the evolving landscape of novel proteins, precision fermentation, and sustainable food systems. Kantha serves on the Faculty Advisory Board on Food and Agriculture at McGill University and the Board of Trustees at Sonoran University of Health Sciences. She is passionate about advancing the understanding of food science and nutrition in the marketplace with science and sensibility.
